Chef Kyle Fletcher Joins Norse Brewing as Culinary Director

Madeline Thompson Rises as newly created Pastry Chef

Wake Forest, North Carolina – (May 2, 2022) Norse Brewing Company, where hospitality is served by the pint, today announced that Chef Kyle Fletcher has joined the team in the newly created position of Culinary Director. Fletcher moved to Raleigh seven years ago and has worked in some of the area’s top kitchens including Standard Foods under Eric Montagne, serving as Chef de Cuisine at Buku in Wake Forest, and Executive Chef at Wye Hill Kitchen and Triangle Beer Co. Thompson, who joined in the newly created position of Pastry Chef, to create fresh new desserts, breads, and other decadent and delectable delicacies to Norse Brewing tables for lunch, dinner, and brunch.

The culinary kitchen under Chef Fletcher at Norse Brewing’s flagship location will serve both the restaurant, but also become the test bed and master kitchen for catering, development of the Scandinavian Street Food concept, and the needs of new Norse Brewing Longhouses which will function as taprooms for the brewery.

“I’ve always been guided by what is locally available from farmers here in the Triangle, working closely with individual, heritage farmers and highlighting what is being grown here organically, using everything provided to pay respect to the effort required to create these foods and flavors,” said Fletcher. “I’m excited to be a part of Chris and Brad’s vision for what Norse will become and look forward to adding additional layers and complexities to the menu with smoke, fire, preservation, traditional meats and seafoods, and other elements of Scandinavian culture and cuisine.”

This expansion is part of Norse Brewing’s long-term expansion strategy, “In order to keep that aspect of our brand growing we need to keep introducing new menu items that expands our Scandinavian/Southern food theme and to do that we decided to put a more detailed focus on food by hiring Kyle,” explained Chris Jorgensen, Norse’s Founder. “This is about more than adding great new food to the menu though, it’s setting the stage as we look to expand with new Longhouse locations, offering catering and leverage economies of scale as we grow.”

Effective July 2021, we have implemented a 2% kitchen bonus to every guest check. The money gets distributed evenly between all our amazing kitchen staff. The goal is to provide more equity between Front & Back of House roles, help retain and invest in our current staff, and allow the Back of House to experience the success of Norse as a whole.
